Pumpkin Pie Protein Bites
I have a bit of an obsession with protein bites.
These days I won’t eat a bar that’s loaded with ingredients I don’t recognize, so I stock my pantry with Larabars and Kind Bars, but they can get expensive. So most weeks I set up shop on Sunday afternoon and prep some healthy bars & bites to have on hand for snacks on-the-go.
I came up with this recipe last week in attempt to use some leftover pumpkin after making my homemade pumpkin spice latte.
These have a texture much like pumpkin pie and are great to have on hand when you’re craving something sweet.

Pumpkin Pie Protein Bites
Ingredients:
1 1/4 cup raw almonds
1/3 cup dates
1/4 cup canned pumpkin
2 tablespoon oats (I used quick-cooking)
2 tablespoons hemp hearts
1 tablespoon maple syrup
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon vanilla
pinch of sea salt

Directions:
Process raw almonds into a fine meal in a powerful blender or food processor. Add remaining ingredients and process until dates are chopped and ingredients are well mixed.
Roll into golf-ball size bites and store in the refrigerator.
These should last you about a week and would also taste great with dark chocolate chips should you have them on hand. 🙂
