Strawberry-Blueberry Salad with Poppyseed Dressing

In honor of the upcoming holiday, I thought I’d share a super-easy salad recipe that I’ve been loving this summer.
It just so happens to be red, white & blue…perfect for 4th of July parties and BBQ’s.
It works great as a side dish or as a main course when topped with a bit of grilled chicken.

Ingredients:
(adjust measurements based on desired serving size)
2 cups baby spinach
2 cups arugula
6 strawberries, sliced
1/4 cup blueberries
2 tablespoons walnuts, chopped
1/4 cup, cooked quinoa
Toss all ingredients and top with an all-natural poppyseed dressing (I like Brianna’s) or make your own using this simple, vegan poppyseed dressing recipe.
